This stunning Southern California hotel offers butchery classes for dry-aged beef local to the Coachella Valley. Chef Nyitre Rogers leads instruction, focusing on the science of aging and on the respect for each ingredient. 

“Our beef is sourced from K&M, a family-owned and operated purveyor based in Vernon, California, that is known for bringing traditional values into today’s modern food service industry,” says Chef Rogers. The experience concludes with guests eating their own creation, paired with wine. You also get to take home a personalized apron and a seasoning blend.

Octant Furnas – Azores, Portugal

Dive deeper into the rugged beauty of the Azores Islands by participating in the centuries-old method of cooking underground. Patrons start the process of making a beloved local stew, called cozido, in the hotel’s kitchen. The mixture can include beef, chicken, and spare ribs, along with vegetables such as sweet potatoes and carrots. 

Octant Furnas sits in a beautiful valley equipped with geothermal soil. The cozido is buried in the soil for 6-7 hours, and then unearthed to enjoy with the same festivity as the island’s earliest inhabitants.

At lebua, guests can trade in sky-high, Michelin-starred meals for a more hands-on Thai dining experience. The hotel’s immersive, A Taste of Thailand, Curated By You, begins at a local market, where participants will sample street food and select fresh ingredients alongside culinary staff. 

Back at the hotel, guests prepare traditional dishes in a carefully guided course, gaining insight into the cultural context behind each recipe. The class ends with a shared meal and a recipe booklet to recreate the bold flavors of Bangkok back at home.

Three Little Bears Retreat is a safari-style, all-inclusive mountain basecamp set to open in May 2026. The new property is offering guests a chance to explore Appalachian cooking through hands-on experiences with Executive Chef Neil Ravenna. Inspired by Camp Cookery, the program highlights open-fire techniques, seasonal ingredients, and time-honored recipes rooted in the region’s heritage.

Classes take place in the main lodge or privately in guest cabins, where participants can cook alongside the chef before sitting down to enjoy a meal that reflects the hearty flavors and traditions of the Great Smoky Mountains.

At Jade Mountain Resort, where open-air sanctuaries overlook the Pitons, guests can explore the island’s culinary roots through vegan Creole cooking classes with Chef Elijah. The experience begins at the resort’s Emerald Farm, where participants harvest fresh ingredients before heading to the kitchen to learn traditional techniques reimagined through a plant-based lens.

Hemingways Nairobi gives guests a gateway to explore the country’s culinary heritage through hands-on Swahili cooking instruction, led by in-house chefs. With menus spanning coastal, western, and central regions, each session offers insight into the diverse flavors and traditions that shape Kenyan cuisine.
